Vegan "Junk Food-Style" Macaroni and Cheese

Hi Vegan Actors! Er- Or actors... Or vegans... Or just people.

Welcome to my first post. And it's kind of a cheesy junk food doozy. Do you miss Kraft Mac n' Cheese? You know, that weird (probably unhealthy) powdered cheese stuff?  I kind of do.

Actually, I do kind of a lot.

Here is a vegan recipe I made up that doesn't exactly taste vegan. And luckily it's not complicated to make. You just have to go a store and a buy a few things. You can make this ahead of time or in the early morning hours before getting your long day of work/auditions/rehearsals started. Whatever works for you.

I noticed I crave this quite a bit lately. While running errands on lazy Saturdays, I will even pass up various vegan restaurants in my town, who also have mac n' cheese on their menus, simply because: a) making food at home makes me feel like some pseudo-responsible adult, b) it saves me a tiny bit of money when I make food at home, and c) sometimes I already have all the ingredients at home to make it! Weeeee!

This photo accentuates the whole "junk food" concept of this recipe. Vegans still eat junk food though we can probably still go for a jog right after. Sweet.
 
Vegan "Junk Food-Style" Macaroni and Cheese

1 package of small pasta shells
Daiya Cheddar Cheese Wedge (not the shredded kind)
Tofutti Ricotta Cheese
Tofutti Cream Cheese
Vegenaise vegan mayonnaise (any flavor)
Unsweetened Plain Almond Milk
Yellow Mustard
Field Roast vegan sausage (any flavor)
Ground pepper

(Ingredient amounts are all up to you! Just make sure it tastes good to you.)

Boil pasta on stove in saucepan until al dente. (Meanwhile, cook sausage in skillet with a little bit of olive oil. Follow package instructions for time. Remove from stove when done.) Drain pasta, rinse, and let cool. In same saucepan, add all cheeses, Vegenaise, almond milk, and mustard. Stir until melted. Add pasta to cheese sauce. Slice up vegan sausage, add to pasta and cheese sauce. Mix well. Add ground pepper.

And... Walla! Junk food dinner magic!

To make a healthier version, Google "cashew cheese sauce recipe" or add steamed vegetables! And personally, I found out recently vegan ricotta cheese is not my favorite. So this recipe is a good way to get rid of stuff you spent money on and want to give a second chance before finally chucking it in the trash.
